Mix sugar, milk and yeast together. Set the yeast mixture aside and let it activate. (5 - 10 minutes)
If you want Belgian Waffles with sugar, get some pearl sugar specially for waffles. If you can’t find it like me, use sugar cubes instead and crush it in tiny pieces.
Melt butter on the stove top or the microwave. Add in the vanilla extract and stir until combine.
To make the dough first add flour, salt and the activated yeast in a mixing bowl. Attach dough hook and set the speed to low. Slowly turn up the speed and let it mix until everything is combined.
Once combined add the eggs one by one. When eggs are mixed in add the butter mixture. Mix on high until everything is combined.
Cover the bowl with plastic wrap and let the dough rest for 40 - 60 minutes.
When the dough is ready heat up the waffle maker. Add the pearl sugar/ crushed sugar to the dough and carefully fold it in.
When waffle makes is hot, use 2 spoons to scoop a small ball of dough into each spot (depending on your waffle maker)
Cook until golden brown and the outside is a little bit crispy. Transfer to a cooling rack. You can serve it hot or let them cool down before eating.
TIPS & NOTES
✿ Best to use a stand mixer to mix the dough. Kneading by hands works as well but it will be really sticky.
✿ If you can’t find pearl sugar like me you can crush some sugar cubes.
✿ Can easily be stored in the freezer after making the waffles. Thaw at room temperature and eat cold or heat it up in
a toaster or oven until warm.
✿Delicious served with some ice cream!
