It is made from red beans, also known as adzuki beans, which are known for their sweet and nutty flavor. This dessert is not only delicious but also packed with nutrients, making it a perfect choice for a satisfying and healthy treat.

Red Bean Soup can be enjoyed hot or cold, depending on your preference. It is often served as a dessert or a sweet snack, especially during the hot summer months when a refreshing treat is desired or a cold winter day to warm up.

Soak the beans overnight. Drain water and rinse.

In a pot add the soaked beans, water, mandarin peel and salt. Bring to a boil. Once boiling lower heat. Simmer for 1 - 2 hours or until the beans are soft.

*Refill water if needed

In the meantime let's prepare the filling. I made some glutinous rice balls and tapioca pearls.

When beans are soft..Mash or puree the soup to your desired consistency. I like my soup chunky so I mashed half. Add rock sugar to taste. Add the filling. Cook until the filling is ready.

Serve while hot or cold! ✿◕ ‿ ◕✿

TIPS & NOTES
✿ Mash or puree the red beans to desired consistency.
✿ I used rock sugar to sweeten the soup. Feel free to use other types of sugar.
