The moon festival is around the corner. That means it’s almost time to make mooncakes! One main ingredient usually used as mooncake filling is salted egg yolks! Let’s learn today how to make homemade salted eggs for your mooncakes. You can also use these salted eggs for other cooking and baking recipes.

How To Make Salted Duck Eggs - Salted Chicken Eggs For Mooncakes

There are different methods for homemade salted eggs recipe. Last year I showed how to make salted eggs using the dry method. This year I will show you how to make salted eggs using a brine method. Both methods work well to make salted eggs.

In this video I will be using chicken eggs since I can’t find duck eggs at my local supermarkets. Chicken eggs are smaller in size so they will take less time to make. The salted egg yolk will also be less oilier compared to duck eggs. They still turn out good and are perfect to use for baking recipes.

Salted Eggs | 鹹蛋

Salted Eggs Ingredients

✿ Chicken Or Duck Eggs
✿ Shaoxing Wine
✿ 445 Coarse Kosher Salt
✿ 1350 Milliliters Water
✿ 2 Star Anise
✿ 1 Cinnamon Sticks

Clean the eggs with water and a sponge. I am using chicken eggs since I can't get duck eggs. Dry the eggs with a paper towel.

Let the eggs dry under the sun for 1 hour.




Let's make the brine. Add water, salt, star anise and cinnamon stick to a pot. heat up on medium heat. Cook until the salt is dissolved. Once dissolved bring it to a boil. Once boiling, turn of the heat. Let it cool down completely.




Coat eggs with Shaoxing wine. Carefully place in a clean glass jar. Pour in cooled down salt water.

Optional: Add cinnamon stick and anise. Use wooden skewers to keep the eggs submerged. Store egg at room temperature in a cool dark place. 4 - 5 weeks - chicken egg. 6 - 8 weeks duck eggs. 


5 weeks later. Time to check on our eggs! To check if the eggs are ready, Take out 1 egg and rinse with water. Crack the egg open. Check if the yolk is firm to the touch. You can also boil 1 egg. Taste if the yolk is salty enough. If egg are not ready. Let it sit in the brine longer. When eggs are ready rinse & dry.




Store in the fridge for up to 1 month. Use it for cooking and baking recipes!

TIPS & NOTES
✿ Store eggs in the fridge for 1 - 2 weeks OR boil the eggs and store it in the fridge for up to 1 month.
✿ How to check when the salted egg yolk is ready? You can crack an egg and the yolk should be bright orange and firm to the touch. You can also boil an egg and taste if the yolk is salty enough/to your liking.
✿ Duck eggs will have a more oily and bigger yolk.
✿ You can add the cinnamon stick and star anise to the brine or leave it out.
