Today I have another Dutch pastry recipe for you. We will learn how to make Dutch almond paste-filled pastry log. In Dutch they’re called amandelstaaf or banketstaaf

What is Amandelstaaf?

What is Amandelstaaf? Amandelstaaf is a delicious traditional Dutch pastry, consisting of an outer layer of puff pastry with an almond flavored paste, similar to marzipan. These almond filled pastries are sold around the Dutch holiday sinterklaas. You can find these Dutch almond banket in different letters or shaped in a log.

This Dutch pastry with almond paste, banketstaaf pastry is delicious served warm or can be eaten cold as well. Amandelstaaf are super easy to make at home and they don't require much ingredients. I will teach you how to make the almond paste filling from scratch!

Amandelstaaf | Banketstaaf

Amandelstaaf Ingredients

✿ Puff Pastry
✿ 150 Grams Almond Flour
✿ 150 Grams Sugar
✿ ½ Egg
✿ Lemon Zest
✿ Water

To make the almond paste filling combine almond flour, sugar, lemon zest and ½ egg. Start kneading with your hands and slowly add water and keep kneading until a non sticky paste forms.






Wrap almond paste with plastic wrap. Refrigerate overnight to let the lemon zest infuse into the paste.





Shape almond paste into a log. Cut and shape the puff pastry the same length as the almond paste. Place almond paste log in the middle and roll it up with the puff pastry.

Brush egg wash at the end and tip. Pinch the edges to seal.


*You can now shape it into a letter if you prefer.
Brush egg was on top with the remaining ½ egg.
Optional: top with sliced almonds.

Bake at 400F for 20 min or until golden brown.



Let it cool down on a wire rack and serve warm or let it cool down completely.

TIPS & NOTES
✿ You can adjust the sugar for the almond paste to your personal preferences.
✿ You can let the almond paste rest 30 min as well but when you refrigerate overnight, the lemon flavor will infuse more into the paste.
✿ You can shape the log into different letters or shapes.
✿ If you don't want to make your own almond paste, you can buy ready-made almond paste in most Dutch supermarkets, or online.
✿ You can decorate the pastry with sliced almond on top before baking or just coat it with a layer of powdered sugar after baking.
