School has started, which means it’s time for some bento recipes again! For today’s bento we will learn how to make corn pancakes. These corn pancakes have a nice combination of sweet and savory. Make these pancakes for breakfast, lunch or a quick snack.

Corn Pancake

Corn Pancake Ingredients

✿ 1 Can Corn
✿ 1 Cup Flour
✿ 1 Teaspoon Baking Powder
✿ 2 Eggs
✿ Cheese
✿ Salt & Pepper (To Taste)
✿ Other Seasoning (To Taste)

Optional: puree 1/4 cup corn for the batter for a creamier batter and stronger corn flavor.

Add all the ingredients to a bowl and mix to combine.

Scoop some batter in a non stick pan. Cook both side until golden brown.

In our bento box we also got steamed bun, hot dog egg flowers, marshmallow and mangos.
