Homemade tofu from scratch without gypsum
Today we will learn how to make tofu without gypsum. Did you know that it is not that hard to make tofu from scratch. If you know how to make soymilk then this will be an easy recipe for you. To learn how to make homemade tofu, first you will need to learn how to make homemade soymilk
Aside from soymilk we will also need a Coagulant to make tofu. What is Coagulant? The Coagulant is added to thicken the soymilk and turn it into curd. Once it turns into curd you can press out the water to make tofu. There are different types of Coagulant you can use to make tofu. The one we will be using is GDL also known as Glucono Delta Lactone. Some other tofu coagulants are gypsum or nigari. Each of them will give a different texture. I find using GDL gives the tofu a smooth and silky texture

It's fun to know how to make tofu at home and it is way cheaper than buying it at the store! Make this tofu to add to your dinner. There is a variety of firmness. Making tofu at home you can easily decide how firm you want your tofu. With this recipe you can make silken tofu, soft tofu, firm tofu, or extra firm tofu! Tofu from scratch is very versatile. You can use it to add to your dishes or it can substitute meat to make vegan recipes and is super healthy as well!

Tofu | 豆腐
Tofu Ingredients
✿ 250 Grams Soybeans
✿ 2 Liters Water
✿ 5 Grams GDL
✿ 2 Tablespoons Warm Water

Add water until soybeans are covered. Soak the beans overnight.
The next day. Drain the water. Remove soy bean skin if preferred.
Let's start by making homemade soy milk! The water - soy beans ratio to make tofu is 1:8. We used 250 grams soybeans so we will need 2 liters water.
This will make approx. 1900 - 1950 milliliters soy milk enough to make 1 block of tofu.

Discard pulp while soy milk is hot. Be very careful! * You can also discard the pulp before cooking the soy milk.
Dissolve GDL with 2 tablespoons warm water. Pour the HOT soy milk over it. Pour from about 20cm above so it will mix well. Give it a quick stir and remove the bubbles. Cover for 15 - 20 Min. Check if it's set.
Line tofu mold with cheesecloth. Scoop in the tofu. Cover top with cheesecloth. Top it with something heavy to drain out the water. Increase weight by time. Press until desired firmness. Carefully take out the tofu
To store, cover with water and refrigerate

TIPS & NOTES
✿ If the soymilk is not the right temperature when pouring into the GDL mixture it will not set. So make sure the soymilk is HOT.
✿ You will need a precision scale to measure the GDL.
