Soboro Bread | 곰보빵

soboro Bread Ingredients

Tangzhong:
25 Grams Bread Flour
✿ 80 Milliliters Milk

Dough:
400 Grams Bread Flour
✿ 120 Milliliters Milk
7 Grams Yeast
15 Grams Sugar
80 Grams Condensed Milk
✿ 1 Egg
✿ ½ Teaspoon Salt
✿ 55 Grams Butter

Topping - Filling Peanut Streusel:
✿ 75 Grams Butter
50 Grams Peanut Butter
90 Grams Brown Sugar
✿ 1 Egg Yolk
✿ 1 Teaspoon Vanilla Extract
✿ 140 Grams Flour
✿ ½ Teaspoon Baking Powder
✿ 1 Tablespoon Cornstarch

To make milk bread, we will need to make tangzhong / water roux. Add milk and flour to a pan. Cook until a paste forms


Activate the yeast with lukewarm milk and sugar.

We will be using a stand mixer today! Feel free to knead by hand. Add all the ingredients except the butter to the stand mixer bowl. Mix on low speed for 3 minutes. Add the butter and mix again on low speed again for 3 Min. Turn up speed to medium. Mix for another 3 minutes. Total mixing time 9 minutes.

Place the dough in a greased bowl. Let it rest for 1 hour 

Let's make the peanut streusel. Add all the ingredients together. Mix until crumbly.


Time to make bread! Knead the dough a little to remove air. Divide in 12 equal pieces .

Shape each dough into a ball. Flatten the ball. Roll the sides thin while keeping the middle thick. Add about 1 Tbsp of peanut streusel. Close the bread. Put some streusel on a plate. Dip top of the bread in a cornstarch - water mixture.
Coat with the peanut streusel.

Cover with plastic film. Rest for 45 - 60 Min or until doubled in size .


Bake 375F | 13 - 15 Min
Cool down

TIPS & NOTES
✿ For the peanut filling you can use chunky or smooth peanut butter.
✿ Adjust filling ingredients to taste.
