Korean glass noodles stir fried with vegetables
Today we will learn how to make Japchae.
What is Japchae? Japchae is korean glass noodles stir fried with vegetables. The noodles are also known as Cellophane noodles. It’s a transparent noodle made with sweet potato starch. The noodles are stir fried with a mix of vegetables with a simple seasoning with soy sauce and sesame oil.
Usually the vegetables are stir fried separately because they all have different cooking times. Today we will learn how to make an easy one pan version which doesn’t require to stir fry the vegetables separately. Make this easy japchae recipe for a quick lunch or serve it for dinner!

Japchae | 잡채
Japchae Ingredients
Seasoning:
✿ 2 Tablespoons Soy Sauce
✿ 1 Tablespoon Sugar
✿ Black Pepper (To Taste)
✿ ½ Tablespoon Sesame Oil
✿ 2 Cloves Minced Garlic
✿ ½ Onion
✿ 3 Shiitake Mushrooms
✿ ½ Bell Pepper
✿ ½ Carrot
✿ 1½ Cup Spinach
✿ 100 Grams Glass Noodles
✿ 1 Egg

Let’s prepare all the ingredients first. Cut all the vegetables in strips.
Cook glass noodles according to the instructions. Set aside until use.
Let’s start cooking! Start by stir frying onions and shiitake mushrooms until fragrant. Add bell pepper and carrots. Cook for 1 - 2 minutes. Add the spinach and cook for 1 minute as well. Add the cooked noodles and seasoning (to taste). Mix until combined.
Optional: Add cooked egg cut in strips and mix.
Make for lunch or dinner.
