Red Bean Pudding | 砵仔糕

Red BEan Pudding Ingredients

✿ Red Beans

✿ 85 Grams Rice Flour
✿ 55 Grams Wheat Starch
✿ 115 Milliliters Water

✿ 60 Grams Dark Brown Sugar
✿ 50 Grams Cane Sugar
✿ 345 Milliliters Water

Soak red beans overnight. The next day cook the beans until soft. I used the steaming method.

Add water until all the beans are covered. Steam on medium heat for 40 - 60 min. Or until the beans are soft.

You can also boil the beans instead of steaming. When Done add sugar to taste.

To prepare the batter. Add water and sugar to a pot. Cook until the sugar is melted.

In another bowl add the dry ingredients with 115 ML water. Whisk until combined. Add in the hot sugar liquid and whisk to combine.

Prep steamer. Bring water to a boil with the steaming cups inside.

Fill with red beans. Pour over the liquid

*Make sure to stir the liquid again.
Steam on high heat for 15 Min

TIPS & NOTES

✿ Adjust sweetness to taste.
✿ Use White sugar for white red bean pudding.
✿ *Optional: halfway steaming add more red beans on top.
