What Is Ujikintoki

Are you looking for a cold dessert or snack recipe to cool down on a hot day? For today we will be making a popular dessert in many countries. Shaved ice! Also known as bingsu 빙수 in Korea , Kakigori - かき氷 in Japanese or Baobing - 刨冰 in Chinese.

We will be making the Japanese shaved ice version today called Ujikintoki (Green Tea Shaved Ice - 宇治金時) Or also known as the Korean version Green Tea Bingsu. Which is made with green tea shaved ice topped with a simple green tea - matcha syrup and red bean paste. I used my Homemade Red Bean Paste for this recipe. You can make it more yummy by adding a scoop of ice cream and a drizzle of sweetened condensed milk.

How To Make Shaved Ice

You know you can just use a blender to shave the ice. Don't need a ice shaver for this recipe. Just make sure your blender is dry. If there is water in the blender the ice will clump up and become hard.

Ingredients

Matcha Syrup:
✿ 4 Tablespoons Sugar (Or To Taste)
✿ ½ Tablespoon Matcha Powder
✿ 2 Tablespoon Hot Water

✿ Shaved Ice
Red Bean Paste
✿ Ice Cream (For Topping)
✿ Sweetened Condensed Milk (For Topping)

Shave ice using a blender or ice shaver.












Make your own matcha syrup by combining all the matcha syrup ingredients. Mix well until clump free. Add matcha syrup to taste.












Add desired amount of homemade red bean paste or store bought red bean paste on top.











Now you can add your favorite toppings. I added matcha ice cream and sweetened condensed milk to mine.

TIPS & NOTES
✿ Common toppings for Ujikintoki are matcha ice cream, shiratama dango mochi and sweetened condensed milk.
✿ If using a blender to shave the ice. Make sure your blender is dry. If there is water in the blender the ice will clump up and become hard.
