What Is Shiroan 白あん

White bean paste is also known as shiroan in japanese. It is used in different dessert recipes. commonly used as a filling for wagashi,白あん (Japanese confectionery) such as mochi and manju.

How To Make Shiroan & How To use White Bean Paste

The moon festival is approaching, so today we will learn How to make sweet white bean paste for piping or white bean paste to fill our mooncakes! I will teach you how to make the basic unsweetened and sweetened white sweet bean paste. The unsweetened white bean paste can be used to make different flavors like chocolate, matcha, coffee, or fruit flavors as filling for your mooncake. White Bean PAste - Shiroan 白あん

Shiroan Ingredients

✿ 200 Grams Lima Beans
✿ 100 Grams Sugar
✿ 50 Grams Condensed Milk

White Bean PAste PREPARATION

Add enough water to cover all the beans. Soak beans overnight.







Remove the skin from the beans.


Unsweetened White Bean PAste

Add beans to a pan. Add enough water to cover all the beans. Cover pot with a lid and bring it to a boil. Once boiling remove the lid and skim of the white foam. Put the lid back on and let the beans simmer for +/- 1 hour or until the beans are soft.




Check if the beans are ready by pressing it with a fork. They soft be soft.






Place a cheesecloth (bag) inside a bowl. Press the cooked lima beans through a sieve. Or use a blender if preferred.





Let the mixture cool down a bit before squeezing out the water. Your unsweetened white bean paste is ready to use now!



Sweetened White Bean PAste

To make sweetened white bean paste add the bean paste to a nonstick pan. Break it apart. Add sugar and condensed milk to taste.




Turn on heat on low - medium. Cook until thickened/paste forms. Keep stirring to prevent burning.

*Will take approx. 15 - 20 minutes.






Paste will thicken more when cooled down. Use it for baking and pastries!

TIPS & NOTES
✿ Condensed milk is optional. Add it for a creamier white bean paste.
✿ You can add your own powders/flavoring to make different flavors.
✿ Can be stored in the freezer for up to 3 months.
