Today we will learn how to make Singapore Noodles with Shrimp - 星洲炒米粉! Also known as Singapore Mei Fun or Singapore Mai Fun.

You can find Singapore noodles at Chinese restaurants. Singapore Noodles is a Stir Fry of Vermicelli with Vegetables, Meat or Seafood and Eggs, seasoned with curry. In today’s recipe we will be using Shrimp and Char Siu.

Singapore Noodles |星洲炒米粉

Singapore Noodles Ingredients

✿ 2 Tablespoons Curry Powder
✿ 1 Tablespoon Soy Sauce
✿ ½ Teaspoon Sugar
✿ ¼ Teaspoon Chicken Powder
✿ Salt & Pepper
✿ Turmeric (Optional)
✿ Cayenne Pepper (Optional)

✿ 150 Grams Rice Noodles
✿ 8 Shrimp
✿ 1 Garlic Clove
✿ 1 Egg
✿ Onion
✿ Colored Bell Pepper
✿ 1 Spring Onion
✿ Char Siu

Soak noodles in hot water until soft. Drain water and set the noodles aside until use.

Let's cut the veggies and ingredients. Cut vegetables in strips and the meat in strips.


Add some oil to the pan.Stir fry garlic until fragrant. Add the shrimp and cook until half cooked. Add meat if used and mix to combine. Mix in the egg. Add veggies and cook until desired texture.

Add noodles. Mix to combine. Season to taste and mix to combine.

TIPS & NOTES
✿ Amount of vegetables depends on personal preferences.
✿ Adjust seasoning to taste.
✿ If the stir fry noodles are too dry, add 1 - 2 tablespoons of water.
