Strawberry Tart
Strawberry Tart Ingredients
Pastry Cream:
✿ 3 Egg Yolks
✿ 65 Grams Sugar
✿ Vanilla Extract
✿ 20 Grams Flour
✿ 15 Grams Cornstarch
✿ 350 Milliliters Milk
✿ Strawberries
Tart Crust:
✿ 100 Grams Sugar
✿ Lemon Zest
✿ 200 Grams Butter
✿ 300 Grams Flour
✿ 6 Grams Baking Powder
✿ ¼ Teaspoon Salt
✿ 35 Grams Egg

To make the tart shells and butter and sugar into a bowl. Beat until light and fluffy. Add the egg and beat again until incorporated. Add the dry ingredients and mix with a spatula to combine. Transfer to the working area and knead until a dough forms. Wrap with plastic film. Refrigerate for at least 1 hour
To make the pastry cream whisk sugar, vanilla extract and egg yolk until combined. Sift in the flour and whisk until smooth.
In a pan heat up milk until bubbles forms. Add milk to the egg yolk mixture in 2 batches while you keep whisking.
Strain the mixture into a pan. Cook on low-medium heat while you keep whisking until thickened. Transfer to a bowl. Cool down to room temperature before refrigerating.
Let's make the tart shells! Knead dough to soften
Roll out dough approx. 2 - 3 MM thick. Cut out the bottom using the tart shell mold or cookie cutters. Roll out remaining dough in the same thickness. Cut out thin strips for the sides.
Place the bottom in the tart shell mold. Poke holes with a fork. Attach the side. Trim if needed.
Bake 350F | 20 Min. Cool down completely
Let's fill the tarts! Pipe or scoop the custard in the mold. Top with slices or cubed strawberries.
