Youtiao recipe | Chinese Fried dough

Long dough sticks fried until golden brown and crispy. A popular breakfast in China.

What Is Youtiao 油條

Youtiao (油條) also known as You Zha Gui (油炸鬼) in Cantonese, or some people often describe them as a Chinese Cruller, Chinese Fried Churro, Chinese Oil Stick, Chinese Doughnut, Chinese Breadstick, or Fried Breadstick.

Youtiao is a deep fried Chinese doughnut. You can kinda call it a Chinese Churro. These Chinese breadsticks are often eaten for breakfast with Porridge or with Soy milk. You can use these Chinese breadsticks as well to make Zhaliang (炸兩) - (Youtiao wrapped in a rice noodle roll).

How To Make Youtiao - Chinese Fried Dough

After trying out different recipes and techniques. I found out that this is the best version for me. I failed many times and finally I figured out how to make them.

My favorite way to eat these Youtiao are with porridge. Usually I will make a big batch and freeze them. You can easily store them in the freezer and warm it up when ready to consume.

Youtiao (油条) - Chinese Fried Donut

Ingredients

✿ 200 Grams Flour
✿ 1 Teaspoon Double Acting Baking Powder
✿ ¼ Teaspoon Gram baking soda
✿ ½ teaspoon salt
✿ 128 Milliliters Milk
✿ ½ Tablespoon Oil

Day 1

Make a well in the flour and add double acting baking powder,baking soda and salt.

Slowly add the milk or water and knead dough with your hand or stand mixer until smooth.

Let the dough rest for 30 minutes.
After 30 minutes knead the dough for 5 - 10 minutes until soft and smooth.



Optional: Divide dough in 2 equal pieces.
Flatten Youtiao dough into a rectangle. Coat with a thin layer of oil. Wrap in plastic or place it in a ziploc bag.
Let it rest in the fridge overnight.

Day 2

Take the dough out of the fridge and roll it out into a thin long rectangle. +/- 5 mm thick.

Cover the dough and let the dough come to room temperature before continuing. (takes appr. 2 -3 hours)




Cut the dough in strips. Appr. 2 -3 cm in width.


Stack 2 doughs on top of each other.
Use a chopstick or wooden skewer to press a line in the center, lengthwise.

Hold the 2 end parts of the dough and stretch it out. Carefully slide it in the oil (medium - high heat).

Use chopsticks or tongs to turn around the Youtiao. Keep turning so it will expand evenly.


Deep fry until golden brown. Repeat with the rest.

TIPS & NOTES
✿ Use double acting baking powder. If using regular baking powder they won’t puff up as much.
✿ Keep turning the Youtiao with chopsticks or tongs so they will grow big evenly
✿ On day 2 the Youtiao needs to be completely back to room temperature before assembling. Will take App. 2- 3 hrs.
✿ The Youtiao can be stored in the freezer after frying. When ready to consume, warm it up in the oven.
