Today we will make a dim sum dish. Let’s learn how to make Zhaliang. Zhalinag also known as Chaleung 炸两 is a rice noodle roll wrapped around a youtiao. This vegetarian dim sum is usually served with a sweet soy sauce and garnished with sesame seeds and spring onion.

To make your homemade Zhaliang we will need some Youtioa. Youtiao is a crispy fried dough/chinese style doughnut. You can buy store bought youtiao or you can make them yourself. Click here to learn how to make youtiao.

The process of making Zhaliang is the same as cheung fan. If you made cheung fan before this recipe will be a piece of cake.

Zhaliang | 炸两

Zhaliang Ingredients

✿ 60 Grams Rice Flour
✿ 20 Grams Tapioca Starch
✿ 25 Grams Wheat Starch
✿ 250 Milliliters Water
✿ Salt
✿ 1 Teaspoon Oil
Fried Dough Stick

How to Make Zhaliang dim Sum

We are making our homemade fried dough sticks for the zhaliang. Feel free to buy premade dough sticks from the store.

To make the batter combine all the flours, salt and water. Whisk until clump free. Add the oil and whisk again until combined.

Apply a thin layer of oil on a steamable plate or tray. Bring a pot of water to a boil. Place the tray or plate inside.
*Mix batter every time before use. Pour a thin layer of batter on the tray or plate. Swirl around to coat evenly.

Close with a lid and steam for 3 minutes. Remove from the pan.

Break a dough stick in half and place it in the middle. Use a scraper to roll it up.

Cut in desired sizes. Garnish with sesame seeds and spring onion. Serve with a sweet soy sauce.

TIPS & NOTES

✿ Apply some oil on the scraper for when you roll the rice noodle roll. This will prevent it from sticking.
