Japanese Curry Roux

Japanese Curry Roux Ingredients

✿ ½ Onion
✿ 1 Shallot
✿ 5 -6 Garlic Cloves
✿ 100 Grams Butter
✿ 100 Grams Flour
✿ 4 Tablespoon Japanese S&B Curry Powder
✿ 1 Tablespoon Regular Curry Powder
✿ ½ Teaspoon Cayenne Pepper

Cut onion, shallot and garlic in big pieces. In a pan add some oil. Add the cut ingredients and cook until fragrant. Remove onion, shallots and garlic from the pan. Add in the butter and cook until the butter is melted.

Once the butter is melted. Add the flour. Cook on low heat. Keep mixing to prevent it from bruning. The mixture will be clumpy first and turn into liquid. Once it turns into liquid keep cooking until golden brown.

Add all the seasoning. Use a whisk to mix it in. Once combined it’s done.




Pour in a bowl or container. Refrigerate until hardened or overnight.


Cut in desired sizes. Use it to make japanese curry!

TIPS & NOTES

✿ Adjust seasoning to taste.
✿ Store cubes in the fridge for up to a month or in the freezer for up to 3 months.
