Today we will learn how to make sourdough bagels. To make sourdough bagels we will need a sourdough starter. You can make your sourdough starter or buy it at your local bakery. I used my homemade sourdough starter for today’s bagel recipe.

Instead of yeast we will be using sourdough starter for the bagels. The sourdough starter gives a nice sour taste to the bagels. Not only does it give the bagels a sour taste,  using a sourdough starter makes the baked bread easier to digest.

Make these bagels for your daily sandwich or to make a healthier bagel to replace it with the store bought bagels.

The progress to make sourdough recipes takes a little bit longer, but it’s totally worth the time!

Sourdough Bagels

Sourdough Bagels Ingredients

Bagel Dough:
✿ 200 Grams Bread Flour
✿ 15 Grams Sugar
✿ ½ Teaspoon Salt
✿ 140 Grams Sourdough Starter
✿ 70 Milliliters Water

Water Roux:
✿ 40 Grams Bread Flour
✿ 40 Milliliters Hot Water

Water Bath:
✿ 1 Liter Water
✿ 1 Teaspoon Baking Soda
✿ Sugar

Let's make the water roux first. Pour hot water over the flour. Mix until a paste forms. Cool down before use.

To make the bagels dough add all the ingredients to a stand mixer. Mix on medium speed until a non-sticky dough forms. Approx. 5 minutes. Knead dough a little until smooth.

Rest for 15 - 20 Minutes

Divide the dough in 6 equal pieces . Shape each dough into a ball. Rest again for 15 - 20 Min.


Let's shape the bagels! Roll dough out in a rectangle. Roll it up in a string.

Flatten one end with a roller. Bring the 2 ends together and pinch to seal. You can also shape it in a ball and poke a hole in the middle to make a bagel shape. .

Rest until doubled in size. Approx. 3 - 4 hours.



Make the water bath. Once it is boiling, carefully slide the bagels in the water. Boil bagels 30 seconds each side.

* This will create a chewy crust.




Optional: Top with your favorite bagel topping.

Bake 400F | 15 - 20 Min

TIPS & NOTES
✿ For a thicker and chewier crust, boil the bagels longer than 30 seconds.
✿ Proofing time depends on temperature and how active your sourdough starter is.
✿ If the topping is not sticking on top of the bagel, spray bagel with some water or brush egg wash on top before putting on the topping.
