Ube Flan Cake

Ube Flan Cake Ingredients

Cake:
✿ 4 Eggs
✿ Lime Juice
✿ 120 Grams Sugar
✿ ¼ Cup Milk
✿ ¼ Cup Oil
✿ 1 Teaspoon Ube Extract
✿ 112 Grams Cake Flour
✿ 1½ Teaspoons Baking Powder
✿ ½ Teaspoon Salt

Caramel:
✿ 80 Grams Sugar
✿ ¼ Cup Water

Leche Flan:
✿ 6 Egg Yolks
✿ 1 Cup Condensed Milk
✿ ¾ Cup Evaporated Milk
✿ 1 Teaspoon Vanilla Extract

To make the caramel melt sugar and cook until golden/amber brown. Pour in a cake mold. Swirl around to coat the bottom.

Let's make the flan. Add all the ingredients in a bowl. Whisk until combined. Set aside until use.

To make the cake batter combine egg yolks and 60 Grams sugar. Whisk until smooth. Add in milk, ube extract and oil and whisk again until combined. Sift in the fry ingredients. Whisk until clump free.

Whip up the egg whites. Add sugar (60 Grams) in 3 batches. Beat until stiff peaks. Add 1/3 of the meringue. Fold until combined. Add to the meringue. Mix until combined.


Strain flan on top of the caramel. Pour in the cake batter.
Tap to remove air bubbles. Bake cake in a water bath. Bake at 350F for 55 - 65 Min

Optional: cover cake with foil if needed.


Cool down completely. Tap to release the sides.
