Mid-Autumn Festival 中秋节 also known as the Moon Festival or Mooncake Festival, is one of the popular holidays in asian countries. The festival falls on the 15th day of the 8th month on the chinese lunar calendar. On that day they celebrate the end of the autumn harvest.

What Is Snow Skin Mooncake 冰皮月餅

Snow Skin Mooncake is also known as Ice Skin Mooncake or Crystal Mooncake. This version of Mooncake doesn’t need to be baked like the Traditional Mooncakes.

Mooncakes are eaten during the Mid Autumn Festival. They say that on Mid Autumn Festival the moon is the brightest. All family members will come together and have yummy food. The Snow Skin Mooncake will be one of them

Snow Skin Mooncake - 冰皮月餅

Snow Skin Mooncake - 冰皮月餅 Ingredients

Moocake Skin:
90 Grams Glutinous Rice Flour
70 Grams Rice Flour
40 Grams Wheat Starch
60 Grams Sugar
✿ 36 Grams Oil
14 Grams Condensed Milk
✿ 370 Milliliters Milk

Filling:
Red Bean Paste
Black Sesame Paste
Custard

✿ Food Coloring/ flavoring (Optional)
Cornstarch Or Potato Starch (Dusting)

Snow Skin Mooncake Filling

Prepare your favorite filling for your mooncake. For some filling recipes check out the Mooncake Page! (◠‿◠✿)



Snow Skin Mooncake | 冰皮月餅

Sift all the dry ingredients together.
Combine the wet ingredients and mix well. Slowly pour in the wet ingredients to the dry ingredients while you keep whisking. Strain mixture into a steamable bowl.





Steam on high heat for 20 - 30 minutes.





Mix the dough with a spatula until slightly cold. There will be oil floating on top, mix it all in until incorporated. Start kneading with your hands when it’s cool enough to handle.
Knead until a smooth and stretchy dough forms.
* Optional: Add food coloring or flavoring to make colored/flavored mooncake skin.

Wrap it up with plastic film and refrigerate for 1 hour.


If using 50 grams mooncake molds.
Measure:
30 Grams mooncake filling for each mooncake.
20 Grams mooncake skin for each mooncake.






Roll filling into balls.





Take a piece of mooncake skin and flatten it with your hand into a circle. Place your favorite filling inside. Wrap the skin around the filling and shape it into a ball again.

Dust mooncake mold with cornstarch. Coat mooncake with a little cornstarch. Roll in a ball and shape it into an oval. Place it inside the mooncake mold. Gently press a few times and lift up the mold. Press out the mooncake.



Refrigerate 1 -2 hours before consuming!

TIPS & NOTES
✿ Use gloves when kneading the mooncake skin. Or else it will be really sticky.
✿ Use chocolate milk or strawberry milk to make flavored mooncake skin!
✿ You can add matcha powder, cocoa powder or food flavoring to make flavored and colored mooncake skin.
✿ If you don’t have mooncake molds, you can use silicone molds as well!
✿ You can make all the ingredients ahead and make it the next day. (◕‿◕✿)
✿ Store in the fridge in an airtight container for 1 week or freeze the snow skin mooncake for up to 3 months.
✿ When ready to consume take out of the fridge/freezer and let it come to room temperature to soften.
