In a bowl add flour and water. Mix with a spatula. Start mixing with your hands until a dough forms.
*Dough will be sticky.
Mix yeast with approx. 1 tablespoon of water. Rest dough and yeast for 20 min. Add yeast mixture and salt to the dough. Wet your hands to prevent sticking. Fold and pinch the dough until the salt and yeast mixture is incorporated. Rest for 1 hour.
Wet your hands. Stretch and fold the dough 4 - 5 times. Then shape in a ball. Oil a clean bowl. Place the dough inside. Coat dough with more oil. Let the dough rest for 4 - 5 hours at room temperature.
Flour working surface. Divide dough in preferred sizes. I divided mine in 3 to make 3 small pizzas. Shape each dough in a tight ball. Place on a floured baking sheet. Cover with plastic film. Refrigerate overnight.
Preheat the oven 500F with a pizza stone, cast iron or baking sheet. I am using my oven safe dutch oven lid/skillet pan. Take out pizza dough and start shaping. Pull and stretch until desired thickness.
*I am using parchment paper since I don't have a pizza peel. Use your favorite pizza topping! I made a simple pepperoni cheese pizza.
Bake at 500F for 10 - 15 Min. If used, remove parchment paper. Broil for 3 - 5 min or until brown on top.
Enjoy! ✿◕ ‿ ◕✿
