Concha | Mexican Pan Dulce
Concha Ingredients
Topping:
✿ 120 Grams Flour
✿ 100 Grams Powdered Sugar
✿ 100 Grams Butter
✿ 1 Teaspoon Cinnamon
Dough:
✿ 120 Milliliters Milk
✿ 2¼ Teaspoons Yeast
✿ 125 Grams Sugar
✿ 500 Grams Flour
✿ ½ Teaspoon Salt
✿ 100 Grams Butter
✿ 3 Eggs
✿ 1 Teaspoon Cinnamon
✿ 1 Teaspoon Vanilla Extract

Activate yeast with lukewarm milk and sugar.
Add all the ingredients to a stand mixer. Mix on medium low speed for 6 - 8 minutes rr until a smooth and elastic dough.
Place in a greased bowl. Let it rest for 1 hour.
Let's make the topping. Beat butter until soft. Add the powdered sugar and beat until fluffy. Add the remaining ingredients and mix with a spatula. Then knead until a dough forms.
Divide bread dough in 12 equal pieces. Shape each dough into a ball. Proof for 1 hour.
Divide topping in 12 pieces. Flatten using a roller Or use a tortilla press like me.
Place topping on top of the proofed bread. I am using a knife to carve the pattern.
Bake at 350F | 20 - 25 Min.
Cool down on cooling rack
