Carrot Loaf Cake Ingredients
✿ 120 Milliliters Oil
✿ 150 Grams Brown Sugar
✿ 2 Eggs
✿ 80 Grams Greek Yogurt
✿ 1 Teaspoon Vanilla Extract
Cream Cheese Frosting:
✿ 28 Grams Butter
✿ 114 Grams Cream Cheese
✿ 100 Grams Powdered Sugar
✿ ½ Teaspoon Vanilla Extract
✿ ¼ Teaspoon Cinnamon
✿ Salt
✿ 185 Gram Flour
✿ 1½ Teaspoon Cinnamon
✿ ½ Teaspoon Ginger
✿ ¼ Teaspoon Nutmeg
✿ ¾ Teaspoon Baking Soda
✿ 1 Teaspoon Baking Powder
✿ ½ Teaspoon Salt
✿ 200 Grams Shredded Carrots
✿ Optional: Fruit and nuts

Make Batters
Mix Together.
Pour In Mold
Bake 350F | 50 - 60 Min.
Decorate
Drizzle With Chocolate.
Grate carrots. We will need 200 grams of carrots. Use a paper towel to pat dry the carrots.
Add all the dry ingredients into a bowl. Whisk until combined. Whisk in the carrots. Combine the dry ingredients. Add wet ingredients to the dry ingredients. Mix to combine.
Pour in loaf pan lined with parchment paper.
Remove from mold. Let it cool down completely.
Let's make the frosting. Beat butter and cream cheese until fluffy. * Ingredients are room temperature.
Add the other ingredients. Beat again until smooth. Top the cake with desired amount of frosting. Add topping/nuts if preferred.
