Prepare The Dough

Beat the butter and sugar together until soft and smooth. Continue beating until the mixture becomes light and fluffy.
Add yolk and vanilla extract. Beat until combined. Gradually add the flour and mix until a dough forms. Place the dough between two sheets of parchment paper and roll it out evenly to about 3 mm thickness. Refrigerate for at least 1 hour.

Make Cookies

Remove the dough from the refrigerator and peel off the parchment paper. Use cookie cutters to cut out shapes. For an Easter theme, try flowers, bunnies, or eggs.
Cut matching pairs, and use a smaller cutter to create a window in the center of half the cookies. Transfer the cookies to a baking sheet lined with parchment paper.
Bake at 350F for 8 - 10 Min. Allow them to cool completely.

Assemble

Lightly dust the top cookies with powdered sugar.
Spread a small amount of your favorite filling, such as strawberry jam onto the bottom cookies. Gently place the powdered sugar dusted cookies on top to form a sandwich.
