✿ 225 Milliliters Water

Prep Eggs

Crack the eggs into a bowl and whisk gently until smooth. Add 225 g of water to the eggs (1:1.5 ratio). Stir gently until combined, being careful not to create too many bubbles.

Cut your favorite tofu into small cubes. Place the tofu evenly in a steam-safe bowl. Pour the egg-water mixture through a fine-mesh sieve into the bowl with tofu. This ensures a silky smooth texture.

Steam

Cover the bowl with aluminum foil or a lid. Steam over medium heat for 10 minutes. Check for doneness: the egg should be set but still slightly wobbly in the center. Carefully remove from the steamer.

Optional: drizzle with soy sauce, sesame oil, or chopped green onions for extra flavor. Serve hot and enjoy the silky, soft texture!

TIPS & NOTES
✿ Straining is key to remove bubbles and achieve smoothness.
✿ Use medium heat — too high can cause holes or rough texture.
✿ Adjust water slightly for softer or firmer texture:
More water → softer, custard-like
Less water → firmer
