Tea Eggs | 茶叶蛋

Tea Eggs Ingredients

6 Tablespoons Soy Sauce
2½ Tablespoons Dark Soy Sauce
✿ 1 Tablespoon Brown Sugar
✿ 1 Teaspoon Salt
1 Tablespoon Pu-erh Tea
1 Tablespoon Oolong Tea
✿ 2½ Cups Water

✿ 8-10 Eggs
2 Star Anise
4 Bay Leaves
2 Teaspoons Sichuan Peppercorn
1 Cinnamon Stick
✿ 3 Cloves Garlic

Cook Until Desired Yolk Consistency.

Prepare The Eggs

Use a pin or needle to gently poke a tiny hole in each egg. This helps prevent cracking and makes the eggs easier to peel later. Place the eggs in a pot and cover with water. Bring to a boil over medium-high heat. Once boiling, cook the eggs to your preferred doneness. For firm eggs, boil for about 8 minutes. Remove the eggs from the pot and immediately place them in an ice bath. Let them cool completely. Once cooled, gently tap the eggs with the back of a spoon to create small cracks all over the shell.

Make Marinade

Add your tea egg marinade ingredients to a pot and bring it to a boil. Reduce the heat to medium-low and simmer for about 15 minutes to develop the flavor. Turn off the heat and allow the marinade to cool completely.

Marinate Eggs

Place the cracked eggs in a tray or bowl. Pour the cooled marinade over them until fully covered. Cover and refrigerate overnight so the eggs absorb the flavor and develop their signature marbled appearance.

TIPS & NOTES
✿ A strong brewed tea gives the eggs deeper color and flavor. I like to use Oolong And Pu Erh. Feel free to use other types of tea.
✿ Keep the eggs stored in the marinade in the refrigerator. They usually taste even better on day two or three.
✿ You can reuse the marinade once or twice if you boil it again before using. Each batch will be slightly lighter in flavor.
