Claypot Rice with Chicken And Mushroom

Claypot rice Ingredients

Sauce:
✿ ½ Tablespoon Oil
✿ ½ Cup Water
✿ 2 Tablespoons Soy Sauce
✿ 1 Tablespoon Dark Soy Sauce
✿ 1 Teaspoon Sugar
✿ 1 Shallot & Spring Onion

✿ 1 Chinese Sausage
✿ 2 Shiitake Mushrooms
✿ 2 Chicken Thighs
✿ 2 Tablespoons Oyster Sauce
✿ 1 Tablespoon Light Soy Sauce
✿ 1 Tablespoon Shaoxing Wine
✿ 1 Teaspoon Sugar
✿ Salt & Pepper

Slice Chinese sausage thinly. Cut chicken into small bite-sized cubes. Cut mushrooms into even pieces. Add your chicken to a bowl. Season with your preferred marinade (soy sauce, oyster sauce, garlic, etc.). Mix well and “massage” the seasoning into the chicken until fully absorbed. Let it marinate for at least 30 minutes for best flavor.

Cook

Lightly coat your claypot with oil. Add rinsed rice and water as usual for cooking rice. Cover with lid and cook on medium heat for about 5 minutes. Once the rice begins to firm up, use chopsticks to gently poke a few holes in the rice. Add marinated chicken, mushrooms, and sliced Chinese sausage on top. Drizzle a little oil around the edges of the pot to help create that crispy rice layer.

Lower the heat and cook on low heat for about 15 minutes, covered. In a pan, add your sauce ingredients (soy sauce, sugar, water, and aromatics if using). Cook until fragrant and the sugar fully dissolves. Pour the sauce over the claypot rice.

Serve hot and enjoy the crispy bottom rice with every bite! ✿◕ ‿ ◕✿
