Sourdough Banana Bread Ingredients

✿ 350 Grams Bread flour
✿ 90 Grams Active Sourdough Starter
✿ 140 Milliliters Water
✿ 1 Egg
✿ 5 Grams Salt
✿ 7 Grams Sugar
✿ 7 Grams Oil

Make Batter

In a large bowl, mash ripe bananas until mostly smooth with a few small lumps for texture. Add your sourdough discard and other wet ingredients to the bananas. Whisk until fully combined and smooth. Add the dry ingredients to the bowl. Gently whisk or fold until just combined. Avoid overmixing to keep the bread soft and tender.

Bake

Pour the batter into your prepared loaf pan and smooth the top evenly. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let the banana bread cool in the pan for about 10–15 minutes, then transfer it to a wire rack to cool completely.
