Sourdough Steamed Buns
Today I have another sourdough recipe for you! Learn how to make sourdough mantou (Chinese steamed buns) from scratch in this easy recipe! Mantou is a classic Chinese steamed bun made with simple ingredients like flour, water, and yeast. Soft, fluffy, and perfect for breakfast or snacks. In this video, I’m sharing a sourdough version that uses natural fermentation for extra flavor, better texture, and a healthier gut-friendly alternative.
What is Mantou
Mantou (馒头) is a traditional Chinese steamed bun that is soft, pillowy, and slightly sweet. It’s commonly eaten plain or served with savory dishes like braised pork, soups, or even used as a sandwich bun.
Sourdough Mantou vs Yeast Mantou
Sourdough mantou uses a sourdough starter instead of commercial yeast. The sourdough version has: richer, tangy flavor, better texture and chew ,improved digestion, longer fermentation and deeper aroma. Yeast mantou is faster and more predictable, but it lacks the complex flavor and natural fermentation benefits of sourdough. If you’s like the yeast version check out this video

Sourdough Mantou | 馒头
Sourdough Mantou Ingredients
Sweet Stiff Starter:
✿ 50 Gram Starter
✿ 50 Grams Bread Flour
✿ 25 Grams Water
✿ 10 Grams Sugar
✿ 220 Grams Special Bun Flour
✿ 14 Grams Condensed Milk
✿ 10 Milliliters Oil
✿ 110Milliliters Water

Make Stiff Starter
Knead Until A Dough Forms.
Make Dough
Rest for 15 Min.
Shape Dough
Roll In A String And Cut In Desired Sizes.
Steam Mantou
Steam Low Heat 10 - 15 Min.
Feed Starter
Feed your starter to get it active and bubbly. Prepare a sweet, stiff starter for the mantou dough. Mix until it forms a stiff dough. Place it in a clean jar, cover loosely, and let it rest. Allow the starter to double and become domed (mine took about 4 hours).
Make Dough
Attach the dough hook to your mixer. Add the starter and remaining ingredients. Knead until the dough becomes smooth and elastic. Shape the dough into a ball. Cover and rest for 15 minutes.
Shape Mantou
Lightly dust your work surface with flour. Roll the dough into a rectangle. Lightly spray or brush with water (this helps it stick). Roll the dough tightly into a long log. Pinch the seam to seal the bottom. Cut the log into your desired mantou sizes. Place the mantou pieces on parchment. Let them proof until 1.5× their original size. Mine took about 2 hours.
Prepare your steamer basket or a pan with a steaming rack. Bring a pot of water to a boil. Place the mantou in the steamer. Steam on low heat for 10 minutes.

TIPS & NOTES
✿ Condensed Milk is optional. You can leave it out or substitute it with regular sugar.
