Today we will learn how to make homemade lemon curd. Spread it on warm toast, spoon it over yogurt, tuck it into pastries, or savor it straight from the spoon. Today I’m sharing my fail-proof, perfectly balanced lemon curd recipe that is tangy, sweet, and silky every time.
What Is Lemon Curd?
Lemon curd is a luscious, smooth spread made from fresh lemon juice, sugar, eggs, and butter. It has a silky texture that’s both creamy and slightly thick, with a bright, tangy flavor balanced by just the right amount of sweetness. Unlike jam or jelly, which is fruit-based and often chunky, lemon curd is velvety and rich, making it perfect for spreading, filling, or swirling into desserts.
Traditionally, lemon curd was served as a topping for scones in British tea culture, but over time it has become a versatile ingredient in bakeries and home kitchens worldwide. Its uses are endless, from filling tarts and cakes to dolloping onto pancakes or yogurt, lemon curd adds a vibrant pop of flavor and a touch of elegance to even the simplest treats.

✿ 200 Grams Sugar
✿ Lemon Zest (2 Lemons)
✿ 6 Egg Yolks
✿ 100 Milliliters Lemon Juice
✿ ½ Cup Cold Butter
✿ Pinch Of Salt

Prepare Ingredients
Cut the butter into small cubes and keep it chilled. Juice fresh lemons until you have 100 ml of lemon juice. Separate the egg yolks from the whites. You’ll only need the yolks for this recipe.
Make Batter
Add the lemon zest to the sugar. Using your fingertips, rub the zest into the sugar to release the natural oils. This boosts the aroma and enhances the lemon flavor. Add the egg yolks to the zest-sugar mixture and whisk until the mixture becomes pale and creamy. Pour in the lemon juice and whisk until fully combined.
Cook
Pour the mixture into a small saucepan. Cook over low heat, stirring constantly with a spatula or whisk. Continue cooking until the curd thickens and small bubbles begin to appear (do not boil). Remove the pot from the heat. Add the cold butter cubes and stir until fully melted and the curd is smooth and glossy. For an ultra-smooth lemon curd, pour the mixture through a fine mesh strainer into a bowl.
