Yule Log Cake Ingredients

Filling:
✿ 1 Cup Heavy Cream
1 Teaspoon Custard Powder
1 Teaspoon Espresso Powder

Topping:
✿ 1 Cup Heavy Cream
✿ 1 Cup Chocolate

Roll Cake:
✿ 6 Eggs
✿ 30 + 70 Grams Sugar
¼ Teaspoon Cream Of Tartar
✿ 80 Milliliters Milk
80 Grams Cake Flour
20 Grams Cacao Powder
1 Teaspoon Espresso Powder
2 Grams Baking Powder
✿ 60 Milliliters Oil (Room Temperature)

Make Batter

In a bowl, whisk the egg yolks and 30 G sugar until combined. Add oil and milk and whisk until combined. Sift in the dry ingredients. Whisk until smooth.

Beat the egg whites until stiff peaks. Add the sugar (70 Grams) in three batches. Add about ⅓ of the meringue into the egg yolk mixture. Whisk to lighten the batter. Pour the yolk mixture back into the remaining meringue. Use a spatula to combine the batter. Pour onto a lined baking sheet. Tap to remove air bubbles. Bake at 340°F for 35 minutes.

Prepare Decorations

Let’s make the filling. Whip the heavy cream, sugar, and espresso powder (optional) until stiff peaks. Refrigerate until use. To make the ganache: pour warm cream over chocolate. Let sit for 5 minutes, whisk until smooth. Cool to room temperature.

Assemble & Decorate!

Place a sheet of parchment paper over the warm cake. Holding both pieces of parchment, flip the cake. Remove bottom parchment paper. Trim the edges. Cut the top edge at an angle. Make 2–3 shallow cuts (do not cut through) at the bottom edge. Spread the whipped cream filling over the cake. Roll the cake tightly into a log. Refrigerate for 1 hour to set. Whip the cooled ganache until fluffy. Time to decorate! Be as creative as you like.

TIPS & NOTES

✿ For the traditional “branch” look, cut a small diagonal slice from one end of the log and attach it to the side.
✿ For decoration you can use: candied cranberries, rosemary sprigs, powdered sugar “snow,” or holiday décor all work beautifully.
