Crème Brûlée Ingredients
✿ 2 Cups Heavy Cream
✿ Pinch Of Salt
✿ ½ Cup (Keto) Sugar
✿ 1 Teaspoon Vanilla Extract
✿ 6 Egg Yolks

Make Batter
In a saucepan, add heavy cream with a pinch of salt and cook over medium-low heat until you see small bubbles forming around the edges. Don’t let it boil. Remove from heat and set aside. In a mixing bowl, whisk together egg yolks and keto-friendly sweetener. Slowly pour the warm cream into the egg mixture a little at a time, whisking constantly. Strain the mixture through a fine mesh sieve. Pour evenly into ramekins arranged in a baking dish.
Bake in a Water Bath
Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins. Carefully place in the oven and bake at 325°F for about 30–40 minutes, or until the centers are just set and slightly wobbly.
Cool Before Serving
Remove from the water bath and let cool to room temperature. Then cover and refrigerate for at least 4 hours or overnight to set completely. Just before serving, sprinkle a thin, even layer of keto sugar over each custard. Use a kitchen torch to melt and caramelize the sugar until it forms a golden, crispy top.Let the caramel harden for a minute, then crack into that golden crust and enjoy your rich, creamy Keto Crème Brûlée! ✿◕ ‿ ◕✿
TIPS & NOTES
✿ If you’re not following keto, you can easily substitute with regular sugar.
✿ The center should still have a slight jiggle when you remove it from the oven. It will firm up as it cools.
✿ Add a splash of vanilla extract, espresso, or a touch of pumpkin spice for fun flavor twists!
✿ Un-torched custards can be kept covered in the fridge for up to 3 days. Torch the sugar topping only when ready to serve for that signature crackly top.
