Coconut Pudding | 椰汁糕
Coconut Pudding Ingredients
✿ 300 Milliliters Coconut Milk
✿ 300 Milliliters Milk
✿ 150 Milliliters Water
✿ 3 Tablespoons Gelatin Powder
✿ 60 Grams Sugar

Bloom Gelatin
Sprinkle Gelatin On Water.
Heat Up Milk
Cook Until Sugar Is Melted.
Pour In Mold
Refrigerate Until Set
Unmold

Bloom the Gelatin
In a small bowl, mix the gelatin powder with 150 ml of water. Let it sit for about 5 minutes until the gelatin absorbs the water and swells.
Heat the Mixture
In a saucepan, combine coconut milk, milk, and sugar. Gently heat over medium-low heat, stirring constantly until the sugar dissolves completely. Do not let it boil. Once the mixture is warm and smooth, add the bloomed gelatin. Stir continuously until the gelatin is fully dissolved and the mixture is uniform.
Pour and Set
Remove from heat and strain the mixture into molds, cups, or a large dish. Allow it to cool slightly before refrigerating for at least 4 hours, or until fully set. Once firm, unmold or cut into cubes. Serve chilled on its own or with fruit syrup, fresh fruit, or shredded coconut on top for extra flavor.

TIPS & NOTES
✿ Adjust sweetness to taste.
✿ Coconut milk - milk ratio depends on personal preferences.
✿ This pudding is medium firm. For a firmer pudding add more gelatin.
