Cookies With Rice Flour

Today we will learn how to make traditional Chinese rice cookies. Also known as 炒米餅. There are different varieties of the rice cookies. We will make a peanut version today. The peanut cookies we will be making today are crumbly and melt in your mouth.

Rice Flour Cookies

Rice Flour Cookies Ingredients

✿ 200 Grams Rice Flour
✿ 80 Grams Powdered Sugar
✿ 40 Grams Peanuts
✿ 10 Grams Sesame Seeds
✿ 30 - 50 Milliliters Water
✿ 70 Milliliters Peanut Oil

Prep Ingredients

Toast ingredients.

Make Dough

Combine Until Crumbly.

Shape Cookies

Use Mooncake Molds.

Rice Flour Cookies

Bake

Bake 340F | 15 Min.

Toast sesame seeds until fragrant. Repeat with peanuts. Cook rice flour on medium heat for 5 - 8 min until fragrance and slightly yellow.

Crush the peanuts
Optional: Remove some of the skin.


Add rice flour, powdered sugar, sesame seeds and crushed peanut in a bowl. Mix to combine. Pour in the oil and start mixing with your hands until crumbly.

Add water in batches until dough comes together when pressing and crumbles back up.


Fill mooncake mold halfway. Press it in firmly. Place it on a baking sheet line with parchment paper. Press down a few times and then carefully press it out.

You can also use wooden molds. Fill and press it in firmly. Tap the sides to remove.





Bake at 340F for 15 Minutes.
Cool on baking sheet for 10 min before transfering to a cooling rack.
