Today we will learn how to make Ham Sui Kok, a Chinese dim sum dish! Ham Sui Kok, also known as deep fried glutinous rice dumplings! Ham Sui Kok is a popular Cantonese snack that is often served during special occasions or as a street food. It has a crispy exterior and savory filling.

The dumplings are made from a mix of glutinous rice flour, water, and tapioca starch, creating a dough that is then filled with a savory mixture of chopped meat and vegetables.

The dumplings are then deep-fried, resulting in a crispy and golden exterior with a soft and flavorful filling. The dumplings are shaped in an oval, with a crispy exterior, resembling a money bag. This is why it is often considered a symbol of prosperity and good fortune, making it a popular snack during Chinese New Year celebrations.

✿ 100 Grams Minced Pork
1 Teaspoon Cornstarch
1 Teaspoon Soy Sauce
Pepper

✿ Spring Onion
2 - 3 Shiitake
Dried shrimp
✿ Seasoning (To Taste)

Fry Low Heat

Fry Until Golden Brown.

Let’s start by making the dough. Dissolve the sugar in HOT water. Combine the flours and slowly add the hot water while you keep stirring. Once Mixed add extra wheat starch and additional glutinous rice flour. Add glutinous rice flour in batches.

*Amount of glutinous rice flour depends on the humidity.
Start kneading with your hands. Knead until a non sticky smooth and stretchy dough forms. Then add butter and knead again until smooth. Wrap dough in plastic film. Let it rest at room temperature for 30 min.

Let's prepare the filling while the dough is resting. Marinate the minced pork. Cut up all the other ingredients.

Cook the filling and season to taste. I used a little bit of water, 5 spice powder, chicken powder and sugar.

Thicken the filling with cornstarch slurry. (1 Tbsp Cornstarch +1/4 Cup Water)

To shape the dumplings. Oil hands to prevent sticking.
Divide dough in 6 equal pieces. Roll each piece into a ball.
Flatten the ball. Fill with approx. 1 Tbsp filling. Close and shape in a football

Carefully place the sesame balls in the oil. Give it a quick stir to prevent sticking. Deep fry sesame balls until it starts to float. When floating carefully press the balls in the oil. Put up the heat to 350F. Deep fry until golden brown.

TIPS & NOTES
✿ Don't overstuff the balls. The balls might pop and the filling will leak out.
✿ If balls are popping the oil temperature is too high.
✿ Carefully push them in the oil when they are floating, this will make them grow bigger.
✿ You can use your favorite filling. Feel free to use other ingredients for the filling.
