Almond Macau Cookies

Almond Macau Cookies Ingredients

200 Grams Split Mung Beans
50 Grams Almond Flour
✿ 25 Grams All Purpose Flour
✿ 50 Grams Butter
✿ 100 Grams Powdered Sugar
✿ +/- 2 Tablespoons Water
40 Grams Almonds

Prep Ingredients

Toast ingredients.

Macau-Cookies

Make Dough

Combine Until Crumbly.

Shape Cookies

Use Mooncake Molds.

Almond Cookie Recipe

Bake

Bake 285F | 25 Min.

Toast almonds in the oven until fragrant 300F | 5 Min.

Wash mung beans until clean. Cook approx. 10 min in a pan until fragrant and dry. Transfer to a plate or baking sheet. Cool down completely.

Cut almonds in smaller pieces. Blend mung beans into a fine powder. To make it easier you can also buy mung bean powder.

Sift the mung bean powder into a bowl. Add the other dry ingredients. Whisk to combine. Add butter. Mix and rub until incorporated. Add chopped almonds.
*Save 2 Tbsp almonds on the side for later.

Add water until it comes together. It should hold together when you press it.

In the mold add some chopped almonds on the bottom. Fill with the dough and press it in firmly.

You can use wooden molds or the plastic mooncake molds.
Add more if needed. Carefully tap the sides to remove.


Place them on a baking sheet. Bake at 285F for 25 Min

TIPS & NOTES
✿ Instead of grinding your own split mung beans you can buy mung bean flour.
