Chinese Cashew Chicken | 腰果雞丁
Cashew Chicken Ingredients
Sauce:
✿ ¼ Cup Chicken Broth
✿ 1 Teaspoon Soy Sauce
✿ 1 Teaspoon Dark Soy
✿ 1 Tablespoon Oyster
✿ ½ Teaspoon Sugar
✿ Pepper (To Taste)
✿ 2 Teaspoons Cornstarch
✿ 1 Cup Cashews
✿ 450 Grams Chicken Thigh
✿ Ginger
✿ 1 Teaspoon Shaoxing Wine
✿ 1 Teaspoon Soy Sauce
✿ 1 Teaspoon Cornstarch
✿ 1 Onion
✿ 1½ Bell Pepper
✿ 3 Cloves Garlic
✿ 2 Green Onions

Cut chicken and other ingredients in big or desired chunks.
Mince the garlic.
Add seasoning, ginger and cornstarch to the chicken. Mix and massage until combined. Let it marinate at least 30 Min.
For the sauce combine all the seasoning together.
Sear chicken until golden brown or until halfway cooked. Remove from pan. Cook garlic until fragrant. Add the cut vegetables. Cook until desired texture. Add the chicken and cashews. Mix to combine. Add the sauce. Cook until sauce thickens and coated around chicken
Serve hot as a side or main dish

TIPS & NOTES
✿ Instead of chicken broth, you can use water and chicken powder instead.
✿ Adjust seasoning to taste.
