Black Moss Soup Ingredients
✿ 4 - 5 Pork Ribs
✿ 10 Grams Black Moss
✿ 5 - 6 Shiitake Mushrooms
✿ 10 Dried Longan
✿ 1 Lotus Root
✿ 2 Tablespoons Goji Berries
✿ Ginger
✿ Spring Onion

Prepare Ingredients
Blanch Pork And Wash Herbs.
Make Soup
Simmer For 2 Hours.
Season
Season To Taste.
Prep Ingredients
Soak the shiitake mushrooms in cold water overnight until fully softened. Trim off stems if tough. Soak the black moss (fat choy) in water for 30 minutes. Add a small amount of oil to the black moss and soak for another 10 minutes.
Rinse thoroughly. Set aside until use. Peel and slice the lotus root, then rinse thoroughly. Wash all remaining ingredients well.
Bring a pot of water to a boil. Add the pork and blanch for a few minutes. Skim off any scum. Remove the pork and rinse it under cold running water. Set aside.
Start the Soup
Place all prepared ingredients into a clean soup pot except the black moss and goji berries. Pour in hot water until all ingredients are fully covered. Cover the pot and bring to a boil. Reduce heat to low and simmer gently for 1½ to 2 hours.
Optional: Skim off the oil on top. Add the goji berries and black moss to the pot. Season with salt to taste. Continue simmering for another 20 minutes. Taste and adjust seasoning if needed. Serve hot.

TIPS & NOTES
✿ Cooking slowly on low heat helps release flavors without breaking down the lotus root too much.
✿ Optional additions: A small piece of dried tangerine peel (chen pi) can add fragrance.
