✿ 6 Yellow Onions
✿ 2 Tablespoons Oil
✿ 2 Tablespoons Butter
✿ 2 Garlic Cloves
✿ 1 Bay Leaf
✿ Thyme
✿ 8 Cups Beef Broth
✿ ½ Cup White Wine
✿ Salt And Pepper

Prepare Ingredients
Thinly slice the onions. Mince the garlic and set aside.
Make Soup
In a large pot add oil, melt the butter over medium-low heat. Add all the sliced onions and a pinch of salt. Cook uncovered for about 10 minutes, stirring occasionally. Continue to caramelize the onions on low to medium-low heat for 30–40 minutes, stirring frequently to prevent burning. Stir in the minced garlic and sauté for about 1 minute, until fragrant. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for 3 minutes to reduce slightly. Add broth, thyme, Bay Leaf and additional seasoning to taste. Bring the mixture to a gentle boil, then reduce to a simmer. Simmer for 30 minutes.
Prepare Baguette
While the soup simmers, preheat your oven to 400°F. Slice the baguette and toast on a baking sheet for 6–8 minutes, or until golden brown.
Serve
Ladle the hot soup into oven-safe bowls. Top each with a toasted baguette slice, a generous handful of shredded cheese, and a little more on top if desired. Place the bowls under the broiler until the cheese is melted and golden brown.
