What Is Chinese Chicken Ginseng Soup?
Chinese Chicken Ginseng Soup is a traditional herbal tonic made with chicken, ginseng root, and other Chinese medicinal ingredients like, goji berries, Dried Longan and Chinese yam. The soup is gently simmered over low heat to allow all the nutrients and natural flavors to infuse the broth.
In Traditional Chinese Medicine (TCM), your body’s balance between heat (yang) and coolness (yin) is important for overall wellness. Some soups are considered "warming", which can add more heat to the body, while others are more neutral or cooling, which help clear internal heat.
This soup is suitable if you have excess heat, as long as you use the right type of ginseng.
Chinese ginseng is warming and often avoided by people with heat signs (like sore throat, dry mouth, acne, or irritability), for this soup we will be using American ginseng — which is known for its cooling and calming properties.

Ginseng Soup Ingredients
✿ 3 - 4 Chicken Drumsticks
✿ 10 Pieces Dried Longan
✿ American Ginseng Sticks
✿ 4 - 5 Pieces Chinese Yam
✿ 1 Tablespoon Goji Berry
✿ 2 Astrologas ( Optional)

Prepare Ingredients
Wash Herbs, Blanch Chicken.
Blanch Chicken
Cook Soup For 30 Min.
Cut Ginseng
Simmer For 20 More Min.
Skim Oil
Remove The Oil On Top.
Prep the Ingredients
Rinse all herbs (except goji berries) under cold water to remove any dust or residue. Rinse chicken thoroughly.
Blanch the Chicken
Place the chicken in a pot and add enough water to fully cover it.
Bring to a boil and let it boil for 5 minutes. (This helps remove impurities and blood for a cleaner soup.)
Remove the chicken and rinse it under cold running water. Set aside.
Start the Soup
In a clean pot, add the blanched chicken and all rinsed herbs except the goji berries. Add fresh water until the chicken is just covered. Bring to a boil, then reduce to a simmer. Simmer for 30 minutes.
Prepare the Ginseng
After 30 minutes, remove the ginseng root from the pot.
Slice it into smaller pieces — this helps release more of its flavor and nutrients. Return the sliced ginseng to the pot.
Continue Simmering
Simmer the soup for another 20 minutes. Optional: Skim off any excess oil from the surface.
Final Touch
Add goji berries and salt to taste. Simmer for a final 10 minutes.

TIPS & NOTES
✿ For a richer broth use whole chicken skin on.
✿ Alternatively, Chinese (Asian) ginseng can be used for a warming (yang-tonifying) effect, making it more suitable for people with fatigue, cold limbs, or yang deficiency.
👉 Tip: Choose the type of ginseng based on your body’s needs or the season (cooling for summer, warming for winter)
