Today we will learn how to make tofu pudding, tofu fa 豆腐花. Tofu pudding is a popular chinese pudding. Chinese tofu pudding is also known as Douhua 豆花, dou fu hua, soybean pudding or tofu brains.

What is Chinese tofu pudding?

Chinese tofu pudding is a very silky and smooth pudding made from soybeans. It’s like a tofu custard. Since it’s made with soybeans it can be a very healthy snack. Soy Bean pudding can be eaten hot, cold, savory or sweet.

My favorite way to serve this tofu pudding is tofu pudding with ginger syrup, which I will be showing you how to make as well. I like to eat my ginger tofu dessert hot which makes it a nice comfort snack. Nothing is better than a hot silky smooth pudding during the cold weather.

You might have seen the instant tofu pudding packets from the store. I used to buy those all the time when growing up. Freshly made tofu pudding tastes way better because you can adjust the sweetness and you can also make it savory!

Today we will learn 2 different methods on how to make tofu pudding. The first method will be the pouring method. The pouring method is perfect for when you make a fresh batch of soymilk. Don’t worry if you don’t have fresh hot soy milk. In the second method we will be using cold soy milk and we will be using the steaming method. There are also different coagulants you can use to make tofu pudding. The coagulant we will be using is glucono delta lactone (GDL) , tofu pudding without gypsum.

Tofu Pudding Ingredients

Ginger Syrup:
✿ 1 Cup Water
✿ ½ Cup Brown Sugar
✿ Ginger

Steaming Method:
✿ 400 Milliliters Cold Or Room Temp Soy Milk
✿ 1 Gram GDL
✿ 1 Gram Cornstarch
✿ Little Sugar

Pouring Method:
✿ 400 Milliliters HOT Soy Milk
✿ 1 Gram GDL

Tofu Pudding Pouring Method

You can use the pouring method when making fresh soy milk!
Mix GDL with water. Stir until dissolved. Pour the GDL Mixture into a heat proof bowl.




You will need homemade soy milk for the pouring method.
Pour fresh made HOT soy milk over the GDL mixture. Pour from about 20cm above so it mixes well. Quickly remove the foam and cover with a lid. Let it set for approx. 15 - 20 Min.

Tofu Pudding Steaming Method

For the steaming method combine, GDL, cornstarch and a little sugar with 1 tablespoon soy milk. Mix well until dissolved. In a steamable bowl pour in the soymilk and add the GDL mixture. Stir to combine well. Bring a pot of water to a boil. Carefully place the bowl inside. Steam for 10 minutes.



Let's make a ginger sugar syrup. Add water, sugar and ginger to a pot. Stir to dissolve the sugar. Bring to a boil and let it simmer for 5 min.






When tofu pudding is set, pour some sugar-ginger syrup over the pudding. Serve hot or cold.

TIPS & NOTES
✿ You can turn this tofu pudding into a cold, hot sweet or savory dessert/snack!
✿ You’ll need a precision scale to weigh the GDL. If it’s off by 1 gram the texture will be different.
✿ For the pouring method, don’t stir after pouring. Cover with lid as soon you remove the bubbles so it can set.
✿ This recipe is made with homemade soy milk. If using store bough soy milk the texture might be different.
