Today we will learn how to make a Chinese dim sum dish. Cold marinated pork hock. Also known as cold pork knuckle 熏蹄.

This is one of the many dim sum dishes we would always order when going for dimsum. Today I will teach you how to make this at home! At dim sum they are usually served with jellyfish. These cold marinated pork hock are perfect for the hot days!

Marinated Pork Hock

Marinated Pork Hock Ingredients

✿ Pork Hock
✿ Ginger
5 - 6 Star Anise
2 Bay Leaf

Brine:
✿1500 Milliliters Water
✿ 4 - 5 Teaspoons Salt
✿ 1 Teaspoon Chicken Powder
1 Tablespoon  Shaoxing Wine

Make Brine

Simmer For 30 Min!

Cook Pork Hock

Simmer For 1 - 1½ Hour.

Cold-Pork-Hock-Recipe

Cut

Cut In Half And Remove Bone.

Dim-Sum-Pork-Knuckle

Serve

Serve Cold!


To make the brine. Bring water to a boil. Add bay leaf and star anise. Simmer for 30 Min. Turn off the heat. Season to taste with salt and chicken powder.

*It has to be on the salty side. Let it cool down completely.



Now let’s cook the pork hock. Make sure the pork hock is defrosted completely. Bring a pot of water to a boil. Add the pork hock. Simmer for 1 - 1½ Hour depending on the size.

Mine took 1 Hour and 30 Minutes.

When done place the pork hock in an ice bath. Let it sit until cold.


Cut out 2 halves and remove the bone.

Put the pork hock in the brine and refrigerate overnight.





Cut in thin slices. I served it with a homemade sauce made with vinegar/water, sugar, minced garlic and chili peppers.

TIPS & NOTES
✿ Adjust salt to personal preferences. The brine should be on the salty side.
✿ Depending on the size of the pork hock, cooking time may differ.
