Mooncake with a flaky crust filled with red bean paste and salted egg yolk
The moon festival is approaching. That means it is time to learn how to make mooncakes again. The past years I have uploaded videos for how to make traditional mooncakes and how to make snow skin mooncakes. This is one of the mooncake recipes I haven’t posted on my Channel yet!
What Is dan huang su
Flaky mooncake also known as dan huang su 蛋黄酥 or pastry mooncake. Pastry mooncakes look like the shanghai mooncake. Shanghai mooncake is made of a shortcrust pastry which is buttery and crumbly.
This salted egg yolk pastry has a flaky skin and is shaped with a mooncake mold or just round. Pastry mooncake has a variety of fillings. The flaky mooncake recipe I will be showing you today is to learn how to make flaky mooncake with red bean paste and salted egg yolk. Other fillings used for making a pastry mooncake can be lotus seed paste, mung bean paste or sweet potato filling. Check out my other videos if you'd like to learn how to make lotus seed paste.
These mooncakes are a combination of sweet and savory. A perfect chinese salted egg yolk pastry dessert. Mooncakes in the stores are overcharged sometimes, save your money and make it extra special by learning how to make homemade mooncakes instead of buying them.

Pastry Mooncake 蛋黄酥
Pastry Mooncake Ingredients
Water Dough:
✿ 105 Grams Flour
✿ 48 Grams Butter
✿ ½ Tablespoon Custard Powder
✿ +/- 32 Grams Water
Egg Wash:
✿ 1 egg yolk + 1 Tbsp Milk
Filling:
✿ Red Bean Paste
✿ Salted Egg
Oil Dough:
✿ 60 Grams Flour
✿ 35 Grams Butter

Separate the yolks and the whites. Rinse yolks with water.
Place yolks in a steamable plate. Spray the yolks with Shaoxing wine. Steam on medium heat for 5 - 8 minutes. Remove from heat. Cool down before use.
For the mooncakes we will need to make 2 types of dough. Let’s start with the water dough. Mix butter with the flour until crumbly. Once crumbly add the water in batches. Mix and knead until a dough forms. Wrap in plastic film and set aside.
To make the oil dough mix butter and flour together. Knead until a dough forms. Wrap in plastic film as well. Let dough rest for 30 min.
Let's prepare the filling
I am using my homemade red bean paste. For the filling measure 20 Grams red bean paste for each mooncake. Roll each piece into a ball.
*Oil hands to prevent sticking. Flatten red bean paste with your hands. Place a salted egg yolk in the middle. Wrap the red bean paste around. Close it and roll in a ball. Repeat with all. Refrigerate until use.
Divide both oil dough and water dough in 6 equal pieces. First take a piece of water dough. Flatten with your hands. Place a piece of oil dough in the middle. Press it to flatten.
*Make sure that the oil dough stays inside the water dough.
Fold the dough in half. Repeat with all. Roll out the dough vertically. Then roll it up into a sausage shape.
Place dough with line facing up. Press down in the middle with the side of your hands. Then roll it up sideways. Flatten the dough a little with your hands. Flip it around with the ugly side up. Roll the edges thin while you keep the middle thick. Place filling inside. Wrap the dough around and close it.
Brush mooncake with egg wash. (1 egg yolk + 1 Tbsp Milk)
Apply 2 layers of egg wash.
Optional: garnish with black sesame seeds.
Bake at 350F For 25 - 30 Minutes
Cool down completely on cooling rack.

TIPS & NOTES
✿ If making mooncakes in the winter use warm water, in the summer use cold water.
