Homemade White Lotus Seed Paste For Mooncakes and Pastries | 莲蓉馅

Smooth and creamy paste made from dried lotus seed. Used for baking and desserts.
Since the moon festival is coming up, we will learn how to make lotus seed paste for our mooncakes! Mooncakes are popular asian pastries eaten during the mid autumn festival. Lotus seed paste is one of my favorite fillings to use for mooncakes. Beside using it as filling for mooncakes you can use this lotus paste recipe for steamed buns or other pastries as well.
What Is Lotus Seed Paste 莲蓉馅
Lotus seed paste is made with dried lotus seeds. The seeds are cooked until soft and then blended until smooth. Sweetener is added and then cooked into a paste. Usually lotus seed paste is used in asian pastries. Like steamed buns, cookies or mooncakes! You can find pre-made lotus sweet paste at asian grocery stores. Today I will teach you how to make homemade lotus seeds paste.

Homemade lotus seed paste can be adjusted to your personal preferences. You can limit the amount of sugar to make the lotus paste to your preferred sweetness and you will also know what goes into your lotus seed paste.

Lotus Seed Paste Ingredients
✿ 300 Grams Dried Lotus Seed
✿ 200 Grams Sugar
✿ 155 Grams Peanut Oil
✿ 1 Tablespoon Maltose

Lotus Seed PAste PREPARATION
Split open the dry lotus seed. Check if there is a stem inside. Remove the stems. They taste bitter. Add HOT water and let it soak for 1 Hour. Drain the water.
Lotus Seed PAste
Bring a pot of water to boil. Add lotus seed to the boiling water.
*DON'T add the seeds when water is still COLD. The seeds will take a long time to soften. Simmer for 1 hour or until seeds are soft.
When soft, transfer it to a blender and blend until smooth.
Optional: Add 3 - 4 tablespoons of sugar. Cook until golden brown. This will give the lotus seed paste a darker color. Add blended lotus seed. Add remaining sugar in 3 batches. Keep stirring and cooking on medium heat until thickens.
When paste has thickened add oil in 3 batches. Keep cooking on medium heat while stirring. After oil is mixed in add maltose or honey. Keep cooking until paste pulls away from the bottom and looks smooth and shiny.
The whole process takes approx. 30 - 40 min .
Transfer to a bowl. Let it cool down completely before use.
Or store in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 6 months.
Use for mooncakes and pastries!
TIPS & NOTES
✿ If it’s hard to blend, add a little bit of beans water to it.
✿ Do not rinse the seeds with cold water after soaking. The beans will take a long time to cook.
✿ Blend the mixture while it’s still hot for a smoother texture.
✿ Store in the fridge for 1 week or up to a month in the freezer.
