These gingerbread men cookies have a nice soft bite and are packed with warm spices! Make these homemade gingerbread cookies to snack on during the holidays or decorate them into gingerbread men!
What Are Gingerbread Cookies?
Gingerbread cookies are soft spiced cookies. The cookies are flavored with cinnamon, nutmeg, cloves, and ginger, along with molasses. I decorated my cookies to look like Gingy from Shrek! It brings back the fun memories we had growing up.

🎄 145 Grams Butter
🎄 150 Grams Brown Sugar
🎄 200 Grams Unsulphured Molasses
🎄 1 Egg
🎄 Vanilla Extract
🎄 435 Grams Flour
🎄 1 Tablespoon Ginger
🎄 1 Tablespoon Cinnamon
🎄 ½ Teaspoon Nutmeg
🎄 ½ Teaspoon cloves
🎄 1 Teaspoon Baking Soda

Cookie Dough
Make Cookie Dough.

Bake
Bake 350F | 10 -12 Min
Decorate!
Decorate Cookie If Preferred.
Beat butter until soft. Add brown sugar and molasses and beat until combined. Add Egg and Vanilla extract and beat again. Add in the dry ingredients, mix and knead until a dough forms.
Place dough in a zip lock and flatten into a square. Refrigerate the dough at least 3 hours
Roll out the dough. Approx. 5mm thick. Use cookie cutters to cut out the gingerbread man!(ﾉ◕ヮ◕)ﾉ*:･ﾟ✧
Place cookies 1 inch apart from each other on a baking sheet.
Bake cookies at 350F for 10 - 12 Min for medium size cookies. If the cookies are smaller or bigger, baking time might differ.
Once cookies are ready let them cool down on the baking sheet for 5 min before transferring to a cooling rack.
Cookies are ready to eat!
OR decorate the cookies before eating. ✿◕ ‿ ◕✿
TIPS & NOTES
✿ Cooking time depends on the size of the cookie.
✿ Let cookies cool down on baking sheet for 5 minutes before transferring to a cooling rack.
✿ You can use either a hand mixer or a stand mixer for this recipe.
✿ You can make this cookie dough a few days ahead!
