Kerststol | How to Make Dutch Christmas Bread

This year for Christmas we will learn how to make Dutch Christmas bread | how to make stollen bread. Kerststol is also known as holiday bread or Christmas stollen bread in German. In Dutch it's called Kerststol!

This holiday bread recipe is an oval shaped bread with dried fruits and nuts, filled with almond paste (amandelspijs) in the middle and topped with powdered sugar. You can find this stollen cake in most of the Dutch stores around Christmas time. I will teach you the basics on how to make Kerststol. You can personalize your homemade bread by using your favorite dried fruits and nuts.

This Kerststol bread will be a perfect addition to your Christmas breakfast or serve it as a dessert during Christmas dinner! Let's make this homemade fresh bread for Christmas!

Kerststol | Christmas Bread

Kerststol Ingredients

Filling:
✿ 300 Grams Raisins
✿ 100 Grams Nuts
✿ Lime/Lemon Zest
✿ 250 Grams Almond Paste

Bread:
✿ 375 Grams Flour
✿ 10 Grams Yeast
✿ 50 Grams Sugar (To Taste)
✿ 160 Milliliters Milk (Luke Warm)
✿ 1 Egg
✿ ½ Teaspoon Speculaaskruiden(Dutch Spice Mix)
✿ Pinch Of Salt
✿ 75 Grams Butter

Bread Dough

Prepare Bread Dough.

Add Filling

Add Your Favorite Nuts And Dried Fruit.

Rest

Rest for 1 hour.

Add Almond Paste And Shape The Bread.

350F | 20 Min
325F | 15 - 20 Min

Garnish

Top With Powdered Sugar.

If using raisins, start by soaking the raisins with water.

Activate yeast with luke warm milk and a little sugar. Set aside for 5 minutes. Combine flour, Dutch spice mix and salt together. Make a little well and slowly pour the activated yeast mixture in the middle. Start mixing and kneading. Knead until a non sticky dough forms. Add butter and knead again. Once dough forms keep kneading for another 5 - 10 minutes until a soft and smooth dough forms.


Set aside dough and let it rest for 10 min. Drain the water from the soaked raisins and pat dry the raisins with a paper towel. Time to add the filling!

Add raisins, your favorite nuts and some zest. Knead to combine the ingredients




Coat dough with a thin layer of oil . Let it rest for 1 hour.





When the dough is ready, knead the dough to remove air. Roll the dough flat in an oval. Place almond paste in the middle and fold the dough over the almond paste, leaving a gap in front.

Tightly press dough against the almond paste. Cover dough with plastic film and let it rest for 45 minutes.


First bake the bread at 350F for 20 Min. Lower heat to 325F.
Bake the bread for another 15 - 20 Min.





Transfer the bread to a cooling rack . Let it cool down for 10 Min. Brush bread with melted butter and coat with powdered sugar

✿ Feel free to use a stand mixer to make the bread dough.
✿ Use your favorite nuts, dried fruit or other filling to the bread dough. Add your desired amount.
