Today we will learn how to make chinese crispy noodles 海鮮兩面黃. It’s one of the items you can get at dim sum restaurants. The crispy noodles are pan fried or deep fried egg noodles topped with vegetables, protein and seafood coated in a sweet savory sauce. The noodles are often fried until golden brown, giving them a satisfying crunch with every bite. This makes it a popular dish for those who enjoy different textures in their meals.

To make a healthier version we will be air frying the noodles to make it crispy. For the mixture on top of the noodles you can use your favorite vegetables, protein and seafood.

Chinese Crispy Noodles Recipe 海鮮兩面黃

Chinese Crispy Noodles Ingredients

Sauce:
✿ 1 Tablespoon Oyster Sauce
✿ 1½ Tablespoon Soy Sauce
✿ 2 Tablespoons Shaoxing Wine
✿ ½ Teaspoon Sesame Oil
✿ 1 Teaspoon Sugar
✿ Pepper (To Taste)
✿ 3 Tablespoons Cornstarch

✿ 1¼ Cup Water + 1 Teaspoon Chicken Powder

✿ 200 Grams Hong Kong Noodles
✿ 2 Garlic Cloves
✿ ½ Onion
✿ 1 Carrot
✿ 2 - 3 Shiitake Mushrooms
✿ 3 Baby Bok Choy
✿ 2 Spring Onions
✿ 100 Grams Chicken Or Pork
✿ 8 Shrimps

Let’s prepare the noodles first. Let it soak in hot water for 1 minute. You could also blanch the noodles if preferred.

Transfer noodles to ice water and drain. I am using an air fryer today to make the crispy noodles. Spread out desired amount of noodles in the air fryer basket. Spray with oil.

Air Fry 400F | 4 Min *Or until crispy. Set aside until use.

Let's prepare the vegetables and meat. Use your favorite vegetables, poultry and or seafood. Cut everything in thin strips.



Cook garlic and onion until fragrant. Cook chicken until halfway cooked then add the seafood. Once seafood is halfway cooked add the vegetables. Cook for approx. 1 - 2 minutes or until desired texture. Add sauce and spring onion. Cook until thickened


Serve hot as a side or main dish

TIPS & NOTES
✿ Usually the crispy noodles are deep fried or shallow pan fried. Feel free to use that method instead of air frying.
✿ Instead of water and chicken powder, you can use chicken broth instead.
✿ Adjust seasoning to taste.
✿ Feel free to switch the ingredients with your favorite ingredients.
