What is Beef Tripe?

Today we will learn how to make Dim sum beef tripe, also known as 牛柏葉. This dim sum recipe for beef tripes is really yummy! The type of tripe that we will be using today is a book tripe.

What is a beef book tripe? Beef stomach or Tripe is the edible lining of a ruminant's stomach, in this case it is a cow's stomach. Book tripe comes from the third compartment of the stomach of the cow. The ruminant stomach has 4 compartments, briefly four compartments of the stomach are: Blanket tripe comes from the first compartment of the stomach; the most coveted variety, known as honeycomb tripe, comes from the second compartment of the stomach. As we just mentioned the Book tripe comes from the third compartment and lastly the fourth compartment is the least liked and used by people because it doesn't look too appetizing.

You can find this Chinese beef tripe dish in dim sum restaurants. This has always been my favorite item at dim sum. It was a must-have item to order! Today you will learn how to make a beef tripe recipe at home.

Beef Tripe | 牛百叶

Beef Tripe Ingredients

Sauce
✿ ½ - 1 Teaspoon Chicken Powder
✿ ½ Teaspoon Sugar
✿ ½ - 1 Tablespoon Soy Sauce
✿ ¼ Teaspoon Sesame Oil
✿ 1 Tablespoon Cornstarch + ¼ Cup Water

✿ 450 Grams Beef Tripe
✿ 1 Piece Of Ginger
✿ 3 Cloves Garlic
✿ 1 - 2 Red Chili Peppers
✿ Spring Onion
✿ 1 Tablespoon Fermented Black Beans

Blanch And Par Boil Beef Tripe.

Cook Beef Tripe

Cook Beef Tripe With Prepared Ingredients.


Let’s prepare the beef tripe first. Wash beef tripe thoroughly
with water and salt before blanching.

Bring a pot of water to a boil. Add the beef trip and blanch for 2 - 3 Min. After place beef tripe in ice water.

*If beef tripe hasn't been par boiled. Boil until tender.


In the meantime prepare some ingredients. Cut ginger in strips and mince garlic. Optional: Use chili pepper if preferred for a spicy version.

To make the sauce combine all the ingredients and stir well. Set aside until use. Adjust sauce to personal preferences.




Cut the beef tripe in half. Turn beef trip horizontal, cut against the layers in small strips.




In a non stick pan add some oil. Add ginger and garlic and stir fry until fragrance. Add the beef tripe and give it a quick stir.

Add spring onion and chili pepper. Mix again. Add the sauce and let it cook for 5 min or until sauce thickens. Adjust flavor if needed.

Delicious served with rice. ✿◕ ‿ ◕✿

TIPS & NOTES
✿ Depending on the store some beef tripes are par boiled. If you buy beef tripe that hasn’t been par boiled the beef tripe will be tough. Par boil the beef trip at home until tender.
