🥢 What Are Pearl Noodles?
Pearl noodles (sometimes called rat tail noodles, silver needle noodles, or 老鼠粉 loh see fun in Cantonese) are short, stubby rice noodles made from rice flour and sometimes tapioca starch for chewiness. They’re popular in Chinese, Malaysian, and Southeast Asian cuisines.
Their unique size and texture make them perfect for stir-frying — they stay chewy while absorbing all the flavor of the sauce.

Pearl Noodles Stir Fry Ingredients
✿ Pearl Noodles
✿ (Garlic) Oil
✿ Shiitake Mushroom/ King Mushroom
✿ Shrimp
✿ Pork
✿ Chinese Cabbage / Bell Pepper
✿ Seasoning (To Taste)

Prep Ingredients
Cut And Prep Ingredients.
Cook
Stir Fry.
Cut spring onion in strips. Use any of you favorite stir fry ingredients. The amount depends on personal preferences. For mine I used onion, bell pepper, mushrooms and shrimp. Cook onion and bell pepper for 3 - 5 Min. Add mushroom and spring onion (white part). Cook for 2 - 3 Min.
Cook the shrimp. Add more oil if needed. Cook egg and scramble. Add pearl noodles and green part of spring onion.
Season to taste with some soy sauce, sesame oil, chicken powder, salt and pepper. Mix until combined
