Today we will be learning to make another Chinese dim sum recipe. We will learn how to make black bean pork ribs. Black bean cantonese spare ribs recipe is a classic dim sum dish and it’s not that hard to make.

For these black bean pork ribs we will need fermented black beans (豆豉). Fermented black beans are available in most asian stores. It adds a nice umami flavor to the chinese pork ribs.

Black Bean Pork Ribs | 豉汁蒸排骨

Black Bean Pork Ribs Ingredients

Seasoning:
✿ 1 Tablespoon Oyster Sauce
✿ ½ Tablespoon Soy Sauce
✿ Salt & Pepper (To Taste)
✿ ½ Teaspoon Sugar
✿ ½ Tablespoon Shaoxing Wine
✿ ⅓ Teaspoon Baking soda

✿ 1 Teaspoon Sesame Oil
✿ 2 Tablespoon Cornstarch

✿ 500 Grams Pork Ribs
✿ 2 Teaspoons Salt
✿ 2 Tablespoons Cornstarch
✿ 3 Tablespoons Water

✿ 1 Clove Garlic
✿ 1 Piece Ginger
✿ 1 Red Chili Pepper
✿ 1 Green Onion
✿ 2 Teaspoons Fermented Black Beans

Wash

Clean Pork.

Black Bean Dim Sum

Marinate

Season To Taste.

Steam

Steam 20 - 30 Min.

Steamed pork ribs

Serve

Serve With Rice!

How to Make Black Bean Pork Ribs dim Sum

Wash pork ribs with salt, cornstarch and water. Massage for 5 min. This will tenderize the meat. Rinse the meat.




Time to season the pork ribs. Add the ginger, garlic, fermented black beans and seasoning to taste. Massage for 1 - 2 minutes. Once combined add sesame oil and cornstarch. Massage again until combined.




Place ribs in a steamable plate. Top with chili pepper.
Bring a pot of water to a boil. Carefully place the plate in the steamer. Steam on high heat for 20 - 30 Min





Serve with rice.

TIPS & NOTES
✿ Adjust seasoning to personal preferences.
✿ Steam the pork ribs in single layers. Don’t pack the steaming plate with ribs.
