Homemade Chinese Walnut Cookies
I remember we would always buy these traditional walnut cookies at the Chinese bakery. The walnuts cookies versions from the Chinese bakery were twice as big. Nowadays I make my own chinese cookie recipe fresh at home and it will make my house smell like a bakery!Hup toh soh 核桃酥, makes a perfect on the go snack!

Chinese Walnut Cookies | 合桃酥
Walnut Cookies Ingredients
✿ 1 Tablespoon Custard Powder (Optional)
✿ 50 - 100 Grams Ground Walnuts (Toasted)
✿ Whole Walnuts (For Garnish)
✿ 1 Egg Yolks
✿ 1 Egg (Egg Wash)

Toast walnuts in a pan for 5 - 10 min. Let it cool down and crush the walnuts with a rolling pin in desired pieces.
To make the cookie dough mix sugar and butter together until combined. Use a spatula, whisk or hand mixer. Mix in the egg and combine again. Add the dry ingredients and sift in the cake flour. Mix the dough with a spatula until crumbly.
Pour dough onto a silicone mat, add the crushed walnuts and knead with your hands until a dough forms.
Roll cookie dough into a log. Divide cookie dough in desired amount / sizes. Roll each dough into a ball. Place each ball on a parchment paper lined baking sheet.
Flatten the ball by pressing it with your palm into a desired thickness. Optional: use your thumb to press a thumbprint in the middle of each cookie. Now press a whole walnut in the middle.
Brush cookie with egg wash. Bake at 350F for 20 minutes.
Cool down on a cooling rack.

TIPS & NOTES
✿ Remember to toast the walnuts first before adding it to the cookie dough
✿ If you want a smoother cookie without walnut pieces you can blend the walnuts into a powder.
✿ If the dough is too dry or crumbly, add a little bit more butter.
✿ Baking time and temperature are for medium size cookies. If making different sizes the baking time might differ.
✿ You can flatten the cookie more if preferred.
